Japan Wagyu Farm Guide

Kobe · Matsusaka · Ohmi · Miyazaki · Farm Tours · A5 Grading

Wagyu (和牛) is not a single product — it is a family of Japan's most carefully bred and raised cattle, producing beef so marbled with intramuscular fat that it melts at near body temperature. Japan has four major wagyu brands — Kobe, Matsusaka, Ohmi, and Miyazaki — each with its own breeding practices, geography, and flavor profile. For travelers, Japan offers something remarkable: the ability to visit the actual farms where this beef is raised, eat directly from the producer, and understand why A5 wagyu is the most sought-after beef in the world.

The 4 Major Wagyu Brands

Kobe Beef (神戸ビーフ)

Hyogo Prefecture

🐄 Breed: Tajima-gyu (Kuroge Washu)

The world's most famous wagyu brand and arguably the most strictly regulated beef brand in Japan. Kobe beef must come from Tajima cattle born and raised in Hyogo Prefecture, graded A4 or A5, with a BMS of 6 or higher, and the slaughter must occur at designated facilities. Less than 3,000 cows per year meet all the criteria. Every authentic Kobe beef restaurant displays a numbered certificate. The taste is characterized by exceptional buttery tenderness and delicate sweetness.

🍽 Restaurant: ¥8,000–¥30,000/person at certified restaurants🚜 Farm visit: ¥5,000–¥15,000 for farm tour + tasting lunch

Matsusaka Beef (松阪牛)

Mie Prefecture

🐄 Breed: Female Tajima-gyu only

The most exclusive wagyu — Matsusaka uses only female virgin Tajima cattle raised in the Matsusaka area of Mie Prefecture. The restriction to virgin females (which never give birth, keeping the meat more tender) and the extended fattening period (600–900 days) produces the most intensely marbled wagyu of all brands. Matsusaka farmers famously feed their cattle beer in summer to stimulate appetite and massage them to maintain muscle softness. Matsusaka is beloved by Japanese connoisseurs, though less internationally famous than Kobe.

Farm Experience:

Several Matsusaka farmers run direct-service restaurants on or near their farms — you eat beef from their own cattle. The city of Matsusaka hosts the annual Matsusaka Beef Festival in October.

🍽 Restaurant: ¥12,000–¥30,000/person at specialist restaurants🚜 Farm visit: ¥5,000–¥15,000 at farm-direct restaurants

Ohmi Beef (近江牛)

Shiga Prefecture

🐄 Breed: Tajima-gyu (Kuroge Washu)

Japan's oldest wagyu brand — Ohmi beef from Shiga Prefecture has been presented to the Emperor since the 1600s, predating Kobe and Matsusaka as a recognized brand by centuries. Raised in the gentle climate near Lake Biwa (Japan's largest lake), Ohmi cattle benefit from clean water and cool summers. The beef has slightly more robust flavor than Kobe, with excellent marbling. Shiga is easily accessible from Kyoto (30 minutes by train), making Ohmi beef an excellent addition to a Kyoto trip.

Farm Experience:

Farm tours available through Shiga Prefecture tourism programs. Ohmi beef restaurants in Hikone, Nagahama, and Otsu city. Less tourist-oriented than Kobe — more authentic local experience.

🍽 Restaurant: ¥6,000–¥20,000/person at specialty restaurants🚜 Farm visit: ¥4,000–¥12,000 at farm-area restaurants

Miyazaki Beef (宮崎牛)

Miyazaki Prefecture, Kyushu

🐄 Breed: Kuroge Washu

Three-time consecutive winner (2007, 2010, 2012) of the National Wagyu Ability Showcasing Event (全国和牛能力共進会) — Japan's most prestigious wagyu competition — Miyazaki beef has overtaken Kobe in recognition among Japanese beef experts. Miyazaki cattle are raised on Kyushu's lush subtropical grasslands and produce deeply marbled, richly flavored A5 beef. Miyazaki is also the most affordable of the top-tier wagyu, making farm visits and high-quality meals accessible to more travelers.

Farm Experience:

Miyazaki Prefecture actively promotes farm tourism — several ranches offer half-day programs including farm tours, feeding experiences, and BBQ lunch using their own cattle. Book through Miyazaki Tourism.

🍽 Restaurant: ¥4,000–¥12,000/person at restaurants🚜 Farm visit: ¥4,000–¥10,000 for farm BBQ program

The A5 Grading System Explained

Japan's Meat Grading Association (JMGA) grades wagyu on two axes: Yield Grade and Quality Grade. Only beef graded A5 (the maximum on both scales) earns the highest designation.

Yield Grade (A / B / C)

How much usable meat the carcass produces as a percentage of total weight. A = 72%+ yield (most meat per animal). B = 69–72%. C = below 69%. Tajima wagyu breeds naturally score A due to their body composition.

Quality Grade (1–5)

Determined by four factors: (1) BMS Marbling Score (1–12, must be 8–12 for grade 5), (2) color and brightness of meat (bright cherry red for grade 5), (3) firmness and texture of meat, (4) color, luster, and quality of fat. All four must score at the highest level for quality grade 5.

BMS Marbling Score (1–12)

The Beef Marble Score is the most important single indicator. BMS 12 (the maximum) means the meat cross-section shows almost as much white fat as red muscle. A5 wagyu requires BMS 8 minimum. Regular high-quality beef scores BMS 1–2. The visual difference is striking.

What to Look For

When ordering at a restaurant, ask for the grade certificate or BMS score if they have it. A genuine Kobe beef restaurant displays the numbered certification. "Wagyu-style" or "American wagyu" is a different product — full Japanese A5 wagyu must be imported from Japan.

Frequently Asked Questions

What is A5 wagyu?

The highest Japanese beef grade — A yield (most usable meat) + 5 quality score on marbling, color, texture, and fat quality. BMS marbling score must be 8–12 (maximum). Characterized by extensive white fat marbling throughout deep-red muscle.

Can tourists visit wagyu farms?

Yes. The most accessible farm programs are in Miyazaki (ranch BBQ programs), Matsusaka (farmer-run restaurants), and Kobe (organized farm tours via the Kobe Beef Marketing Association). Advance booking required for all.

Best wagyu region to visit?

Kobe for prestige and worldwide recognition; Matsusaka for the most exclusive (female-only cattle); Miyazaki for the best value and most farm-access programs; Ohmi if you're based in Kyoto (30 min away).

How much does wagyu cost in Japan?

Restaurant meals: ¥4,000–¥30,000 per person depending on grade and brand. Farm BBQ programs: ¥4,000–¥15,000. Supermarket A4 wagyu steaks: ¥3,000–¥8,000 per 100g.

What is the difference between wagyu and regular beef?

Wagyu has genetic predisposition to intramuscular fat marbling — fat dispersed throughout the muscle, not just around the edges. The fat melts near body temperature, creating a buttery, melt-in-mouth texture impossible with standard cattle breeds.
